The waiter is clearly enchanted by your aura.
He smiles and flirtatiously asks ‘What will you be having?’
You order the Sicilian.
Salad, that is. Simple. Pure. Perfect.
This Sicilian Salad transports you back to that time...
THE SICILIAN SALAD
INGREDIENTS
2 small Fennel bulbs, plus fronds
1 medium avocado
1 navel orange
1 blood orange
½ cucumber
5 radish, thinly sliced
½ red onion, very thinly sliced
5 ounces mixed greens
VINAIGRETTE
3 tablespoons extra virgin olive oil
1 freshly squeezed lemon
1 freshly squeezed orange
Freshly ground pepper, to taste
Himalayan sea salt, to taste
METHOD
Mix and whisk vinaigrette ingredients. Set aside.
Peel and cut citrus into rounds. Cut fennel into bite-sized pieces. Cut remaining ingredients.
Place mixed greens, citrus, cucumber and radish to serving bowl. Give vinaigrette a final whisk and pour on top of ingredients. Mix well.
Add avocado and red onion. Gently toss. Garnish with fennel fronds.
