HERB ROASTED PARSNIPS

HERB-ROASTED PARSNIPS

A multi-taker in the kitchen, parsnips can be mashed, roasted, sautéed, boiled or baked. A fabulous addition to soups, stews, casseroles, gratins, and purees. And this herb-roasted recipe is a simple side dish for those I-have-no-idea-what-to-cook-tonight nights.

 

INGREDIENTS

8 medium parsnips, peeled and cut lengthwise

2 tablespoons olive oil

1/4 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

2 teaspoons chopped fresh rosemary

2 teaspoons chopped fresh sage

METHOD

Preheat the oven to 425°F. Cut parsnips lengthwise and place in a large bowl. Toss with olive oil, herbs, sea salt and black pepper. Coat evenly. Spread in a single layer on baking sheet. Roast for 25 minutes. Stir and roast for an additional 15 minutes. Enjoy!
